Poha is a popular Maharashtrian breakfast made from flattened rice is a nutritious snack and easy to make. You can make it as a snack or breakfast.
Poha/Flattened Rice/Aval/Beaten Rice
Ingredients

1 cup Poha/ Aval

1 Onion, chopped

1 Green Chilli, chopped

1 Potato, diced
-
½ cup Green Peas
-
1 spring Curry Leaves
-
½ Teaspoon Mustard seeds
-
½ Teaspoon Turmeric
-
½ Teaspoon Hing/Asafoetida

2 Tablespoons Coriander Leaves

2 Tablespoons Roasted Peanuts

1 Tablespoon Lemon Juice

2 Tablespoons Milk
-
Nylon Sev for garnish

Oil

Salt, to taste
Method

Add poha to a sieve. Remove excess powder and wash thoroughly and soak poha in little water for atleast 30 minutes.

After 30 minutes, drain the water and mix turmeric and salt with poha and keep it aside.

Heat oil in a pan, add mustard seeds, once crackle add hing, curry leaves, green chilli and onion and sauté for a minute.

Then add potatoes and peas and cook on a medium heat for 3 to 4 minutes, while stirring occasionally.

Now add washed and soaked poha, lemon juice and milk, mix well and cook for another 2 minutes.

Add Coriander and mix well.

Serve hot garnished with roasted peanut and sev.
