Vegetable Nuggets are a favourite snack for kids. It is not only a fancy snack but also a healthy snack. Veg Nuggets and Chicken Nuggets are always a super hit in my house. Even if you are a great fan of chicken nugget lover won’t be able to say NO to these delicious veg nuggets.
You can alter the veggies according to your preference. I have added carrots, beans, cabbage but you can even add peas, bell peppers, cauliflower, spring onion, corn to give different variation for your nuggets. This can be your kid’s snack or even dinner.
Breadcrumbs give crispiness to the dish. The potato base should be thick to hold a shape. If the potato is very soft, then add extra breadcrumbs to make it thick. I have made heart shape nuggets, but you can make any shape of your choice. This can also be packed in a kids lunch box. These homemade veggie nuggets are super-crispy on the outside and soft when you bite into them.
They were seriously awesome. I think the fact that they are completely veggie-packed makes up for the fact that they are fried. You can also use the air fryer for the healthy version but trust me frying them in the oil adds extra crispiness to the dish.
Tips to make perfect Vegetable Nuggets:
1. Mash potatoes well without any chunks.
2. You can even add red chilli flakes.
3. Potato mix should be like a thick dough to hold a shape.
4. You can even add bell pepper, sweet corn, peas along with other vegetables.
5. You can also add cheese but it is optional.
Here is the step by step process for Vegetable Nuggets:
In a bowl, take 3 boiled and mashed potatoes, 2 tbsp beans,
2 tbsp carrots, 2 tbsp cabbage,
1 tbsp ginger garlic paste, salt,
½ tsp pepper powder, ½ tsp chaat masala,
1 tbsp chilli powder, 1 tsp mixed herbs,
1 tbsp breadcrumbs and mix everything well.
Take another bowl, add 2 tbsp cornflour, 2 tbsp plain flour,
salt, ½ tsp pepper powder.
Add ¼ cup water and make a thick paste (slurry) and keep it ready.
In another bowl, take ½ cup breadcrumbs.
Apply oil on both hands before making the nuggets. Now take some potato mix and give any shape of your choice.
Then dip them in the slurry.
Now take the nuggets from slurry and coat them well in the breadcrumbs.
Repeat the same process for the rest of the potato masala.
Take some oil in a pan, drop the prepared nuggets slowly in the oil one by one. Cook on medium heat on both sides by flipping in between.
Serve with any dip of your choice.
