Fried rice is the most important dish when we think of Chinese cuisine. The preparation part takes little extra time, but the cooking will be done in no time. Fried rice tastes best with Vegetable Manchurian and chicken Manchurian. Choose the right rice for making fried rice. You can use any oil, but I prefer using olive oil, which enhances the taste. The same method can be followed to make Chinese noodles too. I love Chinese food; they have a unique taste and flavour. Celery is not an important ingredient but adding celery adds extra taste to the dish.
I had some leftover prawns 65 so I have added in this dish. Adding prawns, fish, mutton, chicken, eggs makes it mixed fried rice. Check out our Prawn 65 recipe here. You can serve fried rice with Chicken Manchurian or Dragon Chicken.
Tips to make Perfect Fried Rice:
Here is the detailed recipe:
Take a pan, add 3 tbsp oil then add 100 gms boneless chicken,
Then add salt to taste and 1 tsp black pepper powder.
Now saute them in the oil for 3 to 4 minutes till they are nicely cooked and keep them aside.
In the same pan, add 2 tbsp oil, add 1 tbsp chopped garlic, 1 tbsp chopped ginger
Now add 1 tbsp chopped celery and saute them for few minutes. Then add chopped carrots, beans and mix well.
Now move the vegetables on the side in the pan, add 1 egg and make it scramble. Once the egg is cooked well, mix egg and vegetables together.
Then add cooked chicken pieces and mix well. Now add 1 ½ cup cooked basmati rice and mix gently without breaking the rice.
Once everything is mixed, then add salt to taste
Then add 2 tbsp spring onion, ¼ tsp sugar,
Add ½ tsp white pepper powder, ½ tsp vinegar and give it a mix.
Finally, add some chilly prawns (optional) and give it a quick mix.
Serve Mixed Chinese Fried Rice with Chicken Manchurian or Dragon Chicken.

1. Use basmati rice for the perfect fried rice. Long grain rice makes this dish so delicious.
2. Do not over cook your rice. Keep it grainy.
3. You can skip chicken, egg and prawns for veg version.
4. Adding tomato sauce or chilli sauce is optional but I like to keep it this way to keep it simple.
5. You can even add soy sauce but it's optional.
6. Make sure your vegetables, chicken and egg are more than the rice you use for restaurant taste.
