Coconut Burfi is a very traditional sweet of South India. It is one of the most famous sweets during many festivals. It is made using very simple ingredients and the process is also very simple. I inherited this recipe from my Aunty as she used to prepare it frequently during all the celebrations and share it with friends and family. We can even call it ad coconut fudge and perfect for parties. My most favourite part of this sweet is the texture and flavour of the coconut and ghee.

Tips to make perfect Coconut Burfi:
1. Use freshly grated coconut for better taste.
2. Do not add too much ghee.
3. You can also add cashews to the mixture.
4. You can make any shape of your choice.
5. Grease the tray before shifting the burfi mixture.

Here is the step by step process for Coconut Burfi:
Take 2 cups of grated coconut in a pan, dry roast them for few seconds till you get the aroma.
Keep the roasted coconut aside. Now take the same pan, add 1 ½ cup sugar,
½ cup water and mix well till the sugar dissolves in the water completely.
Stir in till you get a single string consistency. Now add the roasted coconut and mix well slowly in low flame.
Add ¼ tsp cardamom powder and mix well till you reach a thick consistency.
Add 1 tsp ghee to bring all together to one single ball.
Now remove the mixture from the flame and pour it in a greased square tray. Allow the mixture to cool down completely. It takes about 10 to 15 minutes. Then make shapes (square or diamond).
Coconut Burfi is ready to serve
Grated coconut is roasted first and then mixed along with sugar syrup and cardamom powder. Then the prepared mixture is poured in a tray and make square shapes when it is cool down completely.
