Donne Chicken Biryani is a very famous biryani in Bangalore. Every place has a different style of biryani like Ambur, Coimbatore, Dindigul, Bangalore, Salem, etc. We have most of these recipes in our blog please do check them. Donne Biryani is similar to any other South Indian Biryani, but the difference is we grind the masala and add them with chicken whereas in other biryani recipes we add the ingredients directly with the chicken. Grinding the masala gives excellent taste and flavour to the rice. Most of the South Indian biryanis are prepared using seeraga samba rice, only for very few styles we use Basmati Rice. We are going to use seeraga samba rice today, but you can always replace them with basmati if you don’t have seeraga samba.

I am a very big fan of biryani. Whenever we visit India, we try to taste all the possible biryanis that are available in my Home Town (Coimbatore). When I come back to the UK, I try to prepare different varieties of biryanis as we can’t find these South Indian biryanis in England. So I somehow try to find many new biryani recipes and enjoy sharing the recipes with my readers.

Tips to make perfect Donne Chicken Biryani:

  1. Soaking the rice is important to get a very good texture.
  2. Try to use seeraga samba rice to better flavour and taste.
  3. I have used garam masala, you can even replace garam masala with any biryani powder.
  4. Adjust green chillies according to your preference.
  5. Do not add any chilli powder.

Here is the step by step process for Donne Chicken Biryani:

  1. Take 3 cups of seeraga samba rice, wash and soak for 30 minutes.
  2. Take 2 tomatoes and grind it to a smooth paste and keep it aside.

 

In a blender, take 2 onions, 15 garlic cloves,

Then 2 pieces of ginger, 6 to 7 green chillies,

1 cup coriander leaves, 1 cup mint leaves

grind it to a smooth paste by adding little water and set it aside. Now the masala and tomato are ready to cook. In a pan, add 75 ml oil,

and 3 bay leaves, 2 stone flowers, 2-star anise, 6 cloves, 6 cardamoms, 1 small piece cinnamon and mix well. Then add 1 kg chicken

mix well in the oil. Now add salt,

½ tsp turmeric, 1 tsp coriander powder,

1 tsp cumin powder, 1 tbsp garam masala and give it a mix.

Then add ground green masala in the chicken and mix everything well.

After everything is mixed well, add tomato puree and give it a mix.

Now cover the pan and cook for 10 to 12 minutes (stir occasionally) to remove raw smell.

Then add 3 cups of water and allow the water to boil well, it takes about 5 to 6 minutes.

Now add soaked rice, adjust salt and mix well. Cover the pan and cook for 10 minutes till the rice absorbs the water.

Open the pan and give it a mix. Place a foil on the pan and cover the lid tightly. Allow it to cook in dum for 10 minutes on low flame.

Donne Chicken Biryani is ready to serve.

Ingredients

  • Chicken - 1 kg
  • Seeraga Samba Rice - 3 cups
  • Onion - 2 numbers (Roughly Chopped)
  • Tomato - 2 numbers (Make a paste)
  • Garlic - 15 numbers
  • Ginger - 2 pieces (cut into small pieces)
  • Green Chillies - 6 to 7 pieces
  • Coriander Leaves - 1 cup
  • Mint - 1 cup
  • Turmeric - 1/2 tsp
  • Coriander Powder - 1 tsp
  • Cumin Powder - 1 tsp
  • Garam Masala - 1 tbsp
  • Bay Leaves - 2 to 3 pieces
  • Stone Flower - 2 pieces
  • Star Anise - 2 numbers
  • Cloves - 5 to 6 numbers
  • Cardamoms - 5 to 6 numbers
  • Cinnamon Stick - 1 small piece
  • Salt, to taste
  • Oil - 75 ml

Method
