This simple fry is easy to make and makes a complete meal.  Choose a fish that has more flush. Seer Fish is best for the fish fry. Fish is loaded with omega 3 fatty acids, Vitamin D and protein which are very important for your brain and body.

Fish fry goes well with fish curry, but I like to enjoy fish fry with any tamarind base curry like Poondu kuzhambu, Milagu Kuzhambu or Tamarind rice. I also make fish fry for evening snack for my kids. My children enjoy eating fish in any form like fry, curry, steamed fish, masala fish, chilli fish, etc. We can use the same method for any fish variety. I use this masala for pomfret, Mackerel, Sea bream, Kingfish, etc. You can add your own spice powder to enhance the taste like curry powder or coriander powder. This simple fish fry is very easy to make. I always shallow fry my fish pieces but you can even do deep fry to get the street food taste.

Fish fry or chilli fish is very famous street food in my hometown Coimbatore. They add more food colour to attract customers, so it is better to prepare freshly for our children and it is very simple to try this method.

Tips to make perfect Vanjaram Fish Fry: 

  1.  Try not to skip rice flour since it acts as a binding agent. If you don’t have rice flour, then replace it with cornflour.
  2.  Adjust chilli powder according to your preference.
  3.  You can even add food colour but I am not a great fan of artificial food colours.
  4.  Leave the marination for a longer time for better taste.
  5.  I have used coconut oil, but you can use any oil for frying.
  6.  I like shallow frying, but you can even do deep fry.
  7.  Adding an egg gives good texture but it is optional. 

Step by step process for Vanjaram Fish Fry:

Take a bowl, add 1 ½ tbsp ginger garlic paste, salt to taste,

Then add 1 tsp turmeric, 1 tbsp chilli powder,

Now add 1 tsp cumin powder, 1 tsp garam masala,

½ tsp pepper powder. Then add 1 ½ tbsp lemon juice,

Then add 1 tbsp rice flour and mix everything well.

Then add 1 egg (optional) and mix well with the masala.

Smear/Coat every fish piece with this spicy paste on both sides. Then add 2 sprigs curry leaves (optional).

Let the marinade sit for 20 to 30 minutes. Heat 2 tbsp oil in a pan, place marinated fish pieces in the oil slowly.

Cook for 2 to 3 minutes on both the sides of the fish. Don’t rush to turn the fish pieces then we will end up in breaking the fish.

Vanjaram Fish Fry is ready to serve.

  • Fish Pieces – 4 numbers
  • Ginger Garlic Paste - 1 1/2 tbsp
