Moringa leaves are very good for health. It has got many medical benefits. It protects our liver, helps to treat cancer, fights against bacterial diseases, makes bone healthy, it helps to treat diabetes, asthma, improves eye health, etc.

We can make many dishes with moringa leaves as well as a drumstick. Drumstick is a very common vegetable which is used more often in sambar. Drumstick sambar is very famous in South India. We can also make many healthy dishes with moringa leaves like Murungai Keerai Soup, fry, poriyal, sambar, sambar made with coconut. Moringa soup is very good for health and its easy to feed children who are a picky eater.

We add drumstick or drumstick leaves in our diet very often. It is very difficult to get in the place where we live. We have to drive 30 minutes to buy proper Indian vegetables, so we drive ever week to buy these vegetables. This is an excellent recipe which is easy to make and also easy to feed children. Tips to make perfect Ghee Fried Moringa:

  1. Wash the leaves well with running water.
  2. Keep the flame in low, before adding the leaves to avoid splattering.
  3. Adding salt while frying is optional.
  4. You can add more ghee while cooking.
  5. Fry till they are crispy to enjoy with rice.
  6. Do not add any extra spice powder.

Here is the detailed recipe for Ghee Fried Moringa Leaves:

Wash drumstick leaves and set it aside.

Take a pan, add 2 tbsp ghee and allow it to heat. Once the ghee is hot, keep the flame in low and add washed moringa leaves slowly. If you keep flame in high, it will start splattering.

Once leaves are added, add salt to taste and start frying the leaves in the ghee. Fry the leaves on medium heat for 10 to 12 minutes or till they are crispy.

  You can feel the leaves if they are crispy, if not leave it for a few more minutes to make it crispy.

Mix with steam rice along with some ghee and salt (if needed). Mix well and enjoy.

Ingredients

  • Moringa/ Drumstick Leaves – 2 cups
  • Ghee – 2 tbsp
  • Salt, to taste

Method

  1. Wash drumstick leaves and keep it aside.
  2. Take a pan, add 2 tbsp ghee and allow it to heat.
  3. Once ghee is hot, keep the flame in low and add washed moringa leaves slowly.
  4. If you keep flame in heat, it will start splattering.
  5. Once leaves are added, add salt to taste and start frying the leaves in the ghee.
