Handi Chicken is a rich creamy chicken curry. Handi means a wide cooking vessel but it is not necessary to cook in handi. you can use any pan of your choice. It goes well with roti, naan, or any kind of bread. You can even make chicken sandwich with the left over curry.
Ingredients

800 gms of boneless chicken

2 onions, sliced

2 chopped tomatoes

4 cloves Garlic finely chopped

1 inch Ginger thinly sliced

1 Green chilly finely chopped
-
6 to 7 Cashews

1 Teaspoon Cumin powder
-
1 Teaspoon Coriander seeds crushed

1 Teaspoon Turmeric
-
1 Teaspoon Chilly powder
-
1 Teaspoon Garam masala
-
1 Tablespoon Kasthuri Methi

3 Tablespoon yogurt
-
3 Tablespoon Cream
-
Salt to taste

Method
Step 1

Cut chicken into small cubes and wash thoroughly.

Soak cashews in warm water and make a fine paste.

Heat oil in pan and fry onions till they are golden brown, keep it aside.

In the same pan, add chopped garlic, ginger, green chilly and tomatoes. Cook them for 3 mins till tomatoes are soft.

Add the fried onion back in the oil along with cooked tomatoes and cook for few mins till onions and tomatoes becomes a smooth curry.

Add crushed coriander seeds, cashew paste, cumin powder, turmeric powder, garam masala, chilly powder and salt. Give it a quick mix to avoid burning.

Add very little water and fry them till they are nicely cooked.

Now add boneless chicken and cover it with a lid and cook on medium heat for 7 to 8 mins.

Once the chicken is cooked well, add yoghurt and fenugreek leaves.

Finally add in cream, which gives rich taste. Give it a mix.

Serve with Pulka, Roti, Naan or Pitta bread.
