Sardines are very small fish which has more bones compare to other fish varieties. We can make many different dishes using fish and the most popular dishes are fish curry and fish fry. Sardines are a good source of omega 3 fatty acids, protein, minerals, calcium and vitamins.
Sardines are available as fresh or canned ones, but I prefer to use the fresh ones. These fishes are very soft and delicate so should be handled with care to avoid breaking them before cooking. Cooking time for these fishes are very less so prepare the base curry well before adding the fishes. Today we are going to make very simple sardines fish fry. It is made with very fewer ingredients and the cooking time is also less.
Sardines mixed with turmeric, chilli powder, salt, lemon juice, rice flour and shallow fried to get a very tasty fish fry. This goes excellent with fish curry or any tamarind based curry.

Tips to make a perfect Sardines Fish Fry:

This is Sardines fish. I have removed head and tail and made small slits for the marination to get inside.
Take a bowl, add 1 tbsp ginger garlic paste, 1 tbsp chilli powder
Then add ½ tsp turmeric, salt to taste
Now add 1 ½ tsp rice flour and lemon juice, mix well
Once the masala is ready, add washed and cleaned fish in the masala and mix well. If you have time allow the marination to rest for 20 to 30 minutes or just go ahead and fry them.
Take a pan, add 5 tbsp oil and add some curry leaves (optional) but curry leaves give good flavour to the fry.
Add marinated fish and start frying. Do not add too many fish in the pan. Now fry them for 3 to 4 minutes before flipping. After flipping cook for 3 to 4 minutes on the other side. Make sure the fish is cooked on both sides before removing.
Serve hot

3. Allow the marination to sit for a few minutes before frying for better taste.
4. You can do deep fry or shallow fry, but I prefer shallow fry.
5. Once the fish is added in the oil, allow them to cook for 3 to 4 minutes before flipping to avoid the fish from breaking.
