Sardines are very small fish which has more bones compare to other fish varieties. We can make many different dishes using fish and the most popular dishes are fish curry and fish fry. Sardines are a good source of omega 3 fatty acids, protein, minerals, calcium and vitamins.

Sardines are available as fresh or canned ones, but I prefer to use the fresh ones. These fishes are very soft and delicate so should be handled with care to avoid breaking them before cooking. Cooking time for these fishes are very less so prepare the base curry well before adding the fishes. Today we are going to make very simple sardines fish fry. It is made with very fewer ingredients and the cooking time is also less.

Sardines mixed with turmeric, chilli powder, salt, lemon juice, rice flour and shallow fried to get a very tasty fish fry. This goes excellent with fish curry or any tamarind based curry.

Tips to make a perfect Sardines Fish Fry:

  1. I usually remove head and tail from the fish but it’s optional.
  2. Adding rice flour is optional but it gives crispiness to the fish.
  3. Allow the marination to sit for a few minutes before frying for better taste.
  4. You can do deep fry or shallow fry, but I prefer shallow fry.
  5. Once the fish is added in the oil, allow them to cook for 3 to 4 minutes before flipping to avoid the fish from breaking.
  6. I have added few curry leaves before frying but it is optional.

Here is the detailed recipe:

This is Sardines fish. I have removed head and tail and made small slits for the marination to get inside.

 Take a bowl, add 1 tbsp ginger garlic paste, 1 tbsp chilli powder

Then add ½ tsp turmeric, salt to taste

Now add 1 ½ tsp rice flour and lemon juice, mix well

Once the masala is ready, add washed and cleaned fish in the masala and mix well. If you have time allow the marination to rest for 20 to 30 minutes or just go ahead and fry them.

Take a pan, add 5 tbsp oil and add some curry leaves (optional) but curry leaves give good flavour to the fry.

Add marinated fish and start frying. Do not add too many fish in the pan. Now fry them for 3 to 4 minutes before flipping. After flipping cook for 3 to 4 minutes on the other side. Make sure the fish is cooked on both sides before removing.

Serve hot

Ingredients

  • Sardines – 5 pieces
  • Ginger Garlic Paste – 1 tbsp
  • Chilli Powder – 1 tbsp
  • Turmeric – ½ tsp
  • Lemon Juice – ½ tsp
  • Rice Flour – 1 ½ tsp (optional)
  • Curry Leaves - 1 sprig (optional)
  • Salt, to taste
  • Oil for frying

Method

  1. Take a bowl, add 1 tbsp ginger garlic paste, 1 tbsp chilli powder, ½ tsp turmeric, ½ tsp lemon juice, salt to taste and 1 ½ tsp rice flour and mix well.
  2. Now add washed and cleaned sardines and mix well with the masala.
  3. Allow the marination for 20 to 30 minutes before frying.
  4. Take a pan, add 4 to 5 tbsp oil, add curry leaves and saute for few seconds.
  5. Then add the marinated fish on the pan.
  6. Do not crowd the pan with too many fishes. Cook in batches
  7. Cook for 3 to 4 minutes on one side and then flip to the other side of the fish.
  8. Don’t keep turning the fish more often then we might break the fish.
  9. Once the fish is cooked on both the sides, remove from the pan and serve hot.
