Misal Pav is a popular dish from Maharashtra. It is a street food consists of thin spicy curry topped with Chivda/sev, raw onions and fresh coriander leaves. This breakfast dish made with moong sprout as a main ingredient or you can use mixed sprouts to make it even healthier. This is my take on Misal Pav.
Ingredients

1 cup Moong Sprouted (Green Gram)

1 Teaspoon Mustard seeds

1 spring Curry Leaves

¼ Teaspoon Asafoetida (Hing)

1 Big Onion, finely chopped

2 Tomatoes, finely chopped

Coarsely grounded Ginger, Garlic & Green Chilli

½ Teaspoon Turmeric
-
1 Tablespoon Chilli Powder

1 Tablespoon Coriander Powder
-
1 Tablespoon Cumin Powder
-
2 Tablespoons Coriander Leaves
-
3 cups Water
-
Oil
-
Salt, to taste
To Serve

Chivda/Sev

1 Tablespoon chopped Onion
Method

Heat oil in pan, add mustard seeds, curry leaves and asafoetida.

Then add chopped onion, coarsely grounded ginger, garlic and green chilli, saute for 1 to 2 minutes.

Now add tomatoes, chilli powder, coriander powder, turmeric, cumin powder and salt.

Once tomatoes are nice and soft, add about 3 cups of water and allow it to boil for 5 to 6 minutes.

Then add sprouted moong and let it cook for 5 minutes.

Once the sprouts are cooked, add chopped coriander leaves.

Serve misal with pav, sprinkled chivda and onions on top.
Tips and Variations:

You can grind 2 Tablespoons of grated Coconut along with ginger and garlic.
