Make your own piri piri sauce at home. It’s a traditional African sauce made from Bird eye chillies. If you can’t find bird eye chillies then you can replace them with regular dried chillies.
This is the sauce they use in Nandos to make piri piri chicken. This is home made version of Nandos sauce with no preservatives.
Ingredients

500 gms of Chicken

Salt, to taste
For Sauce:

1 large Red bell peppers
-
2 Bird’s Eye Chillies
-
4 Cloves Garlic
-
1 Tablespoon Paprika/Chilli powder
-
1 Tablespoon Lemon Juice/Vinegar
-
1 Teaspoon Dried Oregano
-
Oil
-
Salt, to taste
Method
-
First to make sauce, put all the ingredients under the sauce in the blender/food processor and make a smooth paste.

Keep the sauce aside.

Now take the chicken in a bowl add in the piri piri sauce according to your taste.

Adjust the seasoning.

Leave the marination for 3 to 4 hours or overnight.

Now pre-heat the oven 240 degree C. Line the baking tray with foil and arrange the marinated chicken.

Grill the chicken for 5 minutes and take it out to brush the chicken with remaining piri piri sauce.

Again place the chicken in the grill and cook for 7 to 8 mins.

Keep checking the chicken. Don’t over cook the chicken then it won’t be juicy inside.

Chicken should be ready in 20 to 25 mins.

Serve Piri Piri Chicken with Biryani, Pulao or on its own.
Tips and Variation:
-
You can use regular red dry chillies if you can’t find bird eye chillies.

Store the remaining sauce in an airtight container and use it later.
-
Try to leave the marination for longer hours for the best taste.
