Vermicelli is a simple breakfast like rava upma. This dish is very light for easy to make. This is made with roasted vermicelli cooked along with carrots, beans and peas with South Indian tadka. If you are looking for quick and healthy breakfast, then give it a try. This can also be made for dinner if you want something light and tasty. I like to add vegetables when I make my semiya or upma, but it is optional, you can make them without vegetables too. Adding vegetables gives good taste and its easy way to add veggies in kids diet.
I have not tried with other vegetables. I prefer adding carrot, beans and peas. Vermicelli is good for packed lunch and this can be served with Banana, sugar or coconut chutney.

Ingredients

Vermicelli – 1 cup

Carrot – 1 number (diced fine)

Beans – 4 numbers (finely chopped)

Green peas – ¼ cup (I have used frozen peas)

Onion – 1 number (finely chopped)

Tomato – 1 small (finely chopped)
-
Ginger – 1 inch (grated)
-
Curry Leaves – 1 sprig
-
Red Chillies – 2 numbers
-
Mustard Seeds – 1 tsp
-
Channa Dhal – 1 tsp
-
Coriander Leaves – 2 tbsp
-
Salt, to taste

Method

Heat a pan, add vermicelli and fry on low flame for 2 to 3 minutes. Once the colour changes switch off the flame and keep it aside.

Heat oil in a pan, add mustard seeds and allow it to crackle.

Then add channa dhal, red chillies and curry leaves and cook for 30 seconds.

Now add in chopped onions and saute for 2 minutes on medium heat.

Add grated ginger and give it a mix.

Then add tomatoes and cook for 2 minutes or until it becomes soft.

Add salt and little water say about ½ cup to cook the mixture fast.

Now add all the vegetables and add 2 cups of water, cover and cook the vegetables for 3 minutes.

Now open the lid and slowly add the fried vermicelli and mix well.

Stir and cook the vermicelli till they become soft and water is absorbed completely.

Keep stirring in between.

Finally add coriander leaves and switch of the flame.

Serve with chutney and piping hot tea or coffee.
Tips and Variations:

You can follow the same procedure to make rava upma.

Adding turmeric is optional but I don’t add.

Adding vegetables are also optional but I personally enjoy having semiya with vegetables.

It’s not necessary to have chutney, it tastes good even without any accompaniment.

Don’t add too much water then the semiya will become soggy.
